  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup milk
  • 2 cups fresh peaches, peeled and diced
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a bundt pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
  4. In another bowl, combine flour, baking powder, salt, and cinnamon.
  5. Gradually mix the dry ingredients into the wet mixture alternately with the milk, starting and ending with the dry ingredients.
  6. Gently fold in the diced peaches.
  7. Pour the batter into the prepared bundt pan and smooth the top.
  8. Bake for about 60-70 minutes, or until a toothpick inserted comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
  10. For the glaze, mix the powdered sugar with milk until smooth, drizzle over the cooled cake, and serve.

Notes

Using ripe peaches enhances flavor. Don’t overmix to avoid a dense cake. Let cool before glazing.
