Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 package of seasoned stuffing mix
  • 1/2 cup chicken broth
  • 1/4 cup butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, shredded cheddar cheese, and mixed vegetables. Mix well until fully combined.
  3. In a separate bowl, stir together the seasoned stuffing mix, chicken broth, and melted butter until the stuffing is evenly moistened.
  4. Lightly grease a baking dish and spread the chicken mixture evenly at the bottom.
  5. Top with the stuffing mixture, spreading it evenly over the chicken layer.
  6. Place the casserole in the preheated oven and bake for 30-35 minutes or until the top turns golden brown and the dish is heated through.
  7. Allow it to cool for a few minutes before serving.

Notes

For extra creaminess, add a splash of milk to the chicken mixture. You can use leftover turkey or add diced jalapeños for a kick.
