Description

A warm, comforting chicken salad with a creamy dressing and crunchy potato chips.


Ingredients

  • 2 cups cooked cubed chicken breast
  • 1 cup diced celery
  • ½ cup slivered almonds
  • 1 cup mayonnaise
  • 1 cup grated sharp cheddar cheese
  • 2 tbsp fresh lemon juice
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup crushed potato chips

Instructions

  1. Preheat the oven to 350°F and grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the cubed chicken, diced celery, slivered almonds, salt, pepper, lemon juice, mayonnaise, and cheddar cheese.
  3. Mix everything together until well blended.
  4. Spread the mixture evenly in the prepared baking dish.
  5. Top the salad with the crushed potato chips.
  6. Bake for approximately 20 minutes, or until the casserole is hot and bubbly.

Notes

For added flavor, consider adding Dijon mustard or fresh herbs. For a lighter version, use Greek yogurt instead of mayonnaise.
