Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 cup black olives, sliced
  • 1/4 cup freshly chopped parsley
  • 1/2 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Boil the rotini pasta in a large pot of salted water until al dente, then drain.
  2. Rinse the pasta under cold water to stop the cooking process and cool it down.
  3. Chop the cherry tomatoes, cucumber, and black olives, then finely chop the fresh parsley.
  4. In a large mixing bowl, combine the cooled pasta with your chopped vegetables and parsley.
  5. Drizzle the Italian dressing over the mixture and toss everything together until evenly coated.
  6. Season with salt and pepper to taste and add more dressing if needed.
