- 2 boneless, skinless chicken breasts
- 8 oz penne pasta
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup spinach (optional)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper, add to skillet, and cook for about 6-7 minutes on each side until browned. Remove and slice chicken.
- In the same skillet, sauté minced garlic until fragrant. Pour in heavy cream and stir in Parmesan cheese until melted and smooth.
- Toss the cooked penne and optional spinach into the skillet and mix until combined.
- Lay sliced chicken on top and garnish with freshly chopped parsley. Serve warm.
Notes
For best results, use freshly grated Parmesan cheese. Feel free to swap chicken for shrimp or tofu for a vegetarian option.
