Description
A deliciously simple one-pan meal featuring golden-brown chicken coated in a savory parmesan crust, paired with crispy potatoes and fresh green beans.

- 1 1/2 lb chicken breast (about 3–4 pieces, approx. 1 inch thick)
- 6 T olive oil (divided)
- 4 garlic cloves (minced, divided)
- 2/3 c grated parmesan (divided)
- 1/3 c breadcrumbs (Italian or plain)
- 1/2 tsp cracked pepper
- 1/2 – 3/4 tsp sea salt
- 2 lb red potatoes, cut into bite-sized pieces
- 1 lb fresh green beans, ends trimmed
- 1 tsp Italian seasoning (optional, for plain breadcrumbs)
- 1 T parmesan (optional, for green beans)
Instructions
- Preheat your oven to 425°F. Line a sheet pan with parchment paper or spray with cooking oil.
- In a medium bowl, combine the potatoes with 2 T olive oil, 2 minced garlic cloves, 2 T grated parmesan, salt, and pepper. Toss well to coat.
- Spread the potato mixture along one-third of the sheet pan and bake for 10-15 minutes. For crispier potatoes, add an additional 5 minutes.
- While the potatoes are baking, toss together the chicken, remaining olive oil, garlic, parmesan, breadcrumbs, and seasonings in the same bowl until the chicken is well-coated.
- After the potatoes are slightly tender, remove the pan from the oven and add the chicken.
- Toss the green beans in a separate bowl with 1 T olive oil, a minced garlic clove, and salt and pepper. Add the green beans to the pan.
- Return the pan to the oven and bake for about 25 minutes, or until the chicken reaches an internal temperature of 165°F. Optionally, broil on high for an additional 4-5 minutes for extra crispy potatoes.
- Once done, let the dish cool for a few minutes and enjoy!
Notes
Feel free to substitute chicken with other proteins or vegetables based on your preferences. For extra flavor, marinate the chicken beforehand.
