  • Total Time: 50 minutes
  • Yield: 4 servings 1x
  • Diet: Paleo

Description

A comforting one-pan meal of crispy Parmesan chicken, roasted potatoes, and vibrant green beans, perfect for busy weeknights.

Ingredients

Scale
  • 1 ½ lb chicken breasts (about 34 pieces, 1 inch thick)
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • ⅓ cup grated Parmesan cheese
  • ⅓ cup breadcrumbs (Italian or plain; add 1 tsp Italian seasoning for plain breadcrumbs)
  • ½ tsp cracked pepper
  • ½ to ¾ tsp sea salt
  • 2 lb red potatoes, cut into bite-sized pieces
  • 12 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons grated Parmesan cheese
  • Salt and pepper to taste
  • 1 lb fresh green beans, ends trimmed
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 tablespoon Parmesan cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F. Line a sheet pan with parchment paper for easy cleanup or spray it with cooking oil.
  2. In a medium bowl, toss the potatoes with olive oil, minced garlic, Parmesan cheese, salt, and pepper until they are well coated. Spread them out on one-third of your sheet pan.
  3. Place the potatoes in the oven and bake for about 10-15 minutes.
  4. While the potatoes begin roasting, combine the chicken ingredients in a bowl. Coat the chicken well with the olive oil, garlic, Parmesan, breadcrumbs, cracked pepper, and salt.
  5. After the initial potato baking time, remove the pan from the oven and add the chicken to the empty space on the pan.
  6. For the green beans, toss them with olive oil, garlic, and seasoning in a separate bowl, then add them to the sheet pan.
  7. Bake everything together for another 25 minutes, or until the chicken reaches an internal temperature of 165°F.
  8. If you desire extra crispy potatoes, switch your oven to broil for an additional 4-5 minutes.
  9. Once done, let it cool for a few minutes before serving. Enjoy!

Notes

Consider marinating the chicken for deeper flavor or swapping out vegetables for seasonal options.
