Description

A delightful blend of pancake and sausage that creates a comforting breakfast casserole, perfect for busy mornings or leisurely brunches.


Ingredients

  • 2 cups buttermilk pancake mix
  • 1 lb breakfast sausage (bulk or links)
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup pure maple syrup
  • 2 tbsp butter (for greasing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a large baking dish with butter.
  2. In a skillet over medium heat, cook the sausage until browned and crumbly. Drain any excess grease.
  3. In a mixing bowl, combine the pancake mix, milk, and eggs. Mix until just combined – it’s okay if there are lumps!
  4. Fold in half of the maple syrup and some cooked sausage bits to enhance the flavor.
  5. Pour half of the batter into the prepared baking dish. Layer the remaining sausage on top, then pour the rest of the batter over.
  6. Bake uncovered for 30-35 minutes or until the top is golden brown and springy to the touch.

Notes

Refrigerate leftovers for up to 3-4 days, or freeze portions for 1-2 months. Reheat in the oven or microwave.
