- 2 cups buttermilk pancake mix
- 1 lb breakfast sausage (bulk or links)
- 4 large eggs
- 1 cup whole milk
- 1/2 cup pure maple syrup
- 2 tbsp butter (for greasing)
Instructions
- Preheat your oven to 350°F (175°C) and grease a large baking dish with butter.
- In a skillet over medium heat, cook the sausage until browned and crumbly. Drain any excess grease.
- In a mixing bowl, combine the pancake mix, milk, and eggs. Mix until just combined – it’s okay if there are lumps!
- Fold in half of the maple syrup and some cooked sausage bits to enhance the flavor.
- Pour half of the batter into the prepared baking dish. Layer the remaining sausage on top, then pour the rest of the batter over.
- Bake uncovered for 30-35 minutes or until the top is golden brown and springy to the touch.
Notes
Refrigerate leftovers for up to 3-4 days, or freeze portions for 1-2 months. Reheat in the oven or microwave.
