Ingredients

  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 cup chocolate chips or berries (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix the buttermilk, egg, and melted butter until combined.
  4. Combine the wet ingredients with the dry mixture and stir until just combined; be careful not to overmix.
  5. If desired, fold in chocolate chips or berries.
  6. Fill each muffin cup about two-thirds full with the batter.
  7. Bake for 10-12 minutes, or until a toothpick poked in the center comes out clean.
