- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- Optional: chocolate chips, fruit, or nuts
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, mix the milk, egg, melted butter, and vanilla extract.
- Pour the wet mixture into the dry ingredients, stirring until just combined. Be careful not to overmix!
- If you’re adding extras like chocolate chips or nuts, gently fold them in at this stage.
- Fill each muffin cup about two-thirds full with the batter.
- Bake in the preheated oven for 10-12 minutes, or until they are lightly golden and a toothpick inserted comes out clean.
- Let them cool slightly before removing them from the tin.
- Serve warm for the best taste and texture!
Notes
Serve with maple syrup, whipped cream, or fresh fruit. Store in an airtight container in the fridge for up to 3 days.
