Description

Delightful mini pancakes that are perfect for breakfast or as a sweet snack, great for dipping into syrups or jams.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Optional: chocolate chips, fruit, or nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In a separate bowl, mix the milk, egg, melted butter, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients, stirring until just combined. Be careful not to overmix!
  5. If you’re adding extras like chocolate chips or nuts, gently fold them in at this stage.
  6. Fill each muffin cup about two-thirds full with the batter.
  7. Bake in the preheated oven for 10-12 minutes, or until they are lightly golden and a toothpick inserted comes out clean.
  8. Let them cool slightly before removing them from the tin.
  9. Serve warm for the best taste and texture!

Notes

Serve with maple syrup, whipped cream, or fresh fruit. Store in an airtight container in the fridge for up to 3 days.
