Description

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup sharp cheddar cheese, grated
  • 4 slices of bacon, cooked and crumbled
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chives or green onions for garnish

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy, then remove and set aside while keeping the drippings in the pot.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onions are translucent and fragrant.
  3. Stir in the diced potatoes and pour in the chicken broth, bringing the mixture to a boil. Lower the heat to a simmer for about 15-20 minutes, or until the potatoes are tender.
  4. For a creamier texture, use a potato masher or an immersion blender to mash some of the potatoes.
  5. Stir in the heavy cream, grated cheese, and crumbled bacon. Season your soup with salt and pepper to taste.
  6. Serve hot, garnished with chives or green onions.
