- 4 large potatoes, peeled and diced
- 1 cup sharp cheddar cheese, grated
- 4 slices of bacon, cooked and crumbled
- 1 cup heavy cream
- 4 cups chicken broth
- 1 small onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Chives or green onions for garnish
Instructions
- In a large pot, cook the bacon over medium heat until crispy, then remove and set aside while keeping the drippings in the pot.
- Add the chopped onion and minced garlic to the pot. Sauté until the onions are translucent and fragrant.
- Stir in the diced potatoes and pour in the chicken broth, bringing the mixture to a boil. Lower the heat to a simmer for about 15-20 minutes, or until the potatoes are tender.
- For a creamier texture, use a potato masher or an immersion blender to mash some of the potatoes.
- Stir in the heavy cream, grated cheese, and crumbled bacon. Season your soup with salt and pepper to taste.
- Serve hot, garnished with chives or green onions.
