- 2 lbs chicken breast, diced
- 1 cup rice
- 1 cup honey BBQ sauce
- 2 tablespoons olive oil
- 1 cup chicken broth
- Salt and pepper to taste
- Optional: chopped green onions for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken and season with salt and pepper. Cook until golden brown on all sides (about 5-7 minutes).
- Stir in the honey BBQ sauce and mix well.
- Add rice and chicken broth, bringing the mixture to a simmer.
- Cover and cook for about 20 minutes or until rice is cooked and has absorbed the liquid.
- Remove from heat, garnish with green onions if desired, and serve warm.

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 2 months.
