- 1 lb lean ground beef
- 8 oz pasta shells
- 2 cups fresh spinach
- 1 can (14 oz) diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pan, heat olive oil over medium heat.
- Add diced onion and minced garlic, sauté until fragrant.
- Add ground beef and cook until browned, breaking it apart with a spoon.
- Stir in the diced tomatoes and beef broth.
- Bring to a boil, then add the pasta shells.
- Reduce heat to a simmer, cover, and cook for 10-12 minutes or until pasta is tender.
- Stir in fresh spinach and cook until wilted.
- Season with salt and pepper to taste. Serve warm.
