Ingredients

  • 8 oz pasta shells
  • 2 cups fresh spinach
  • 1 can (14 oz) diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large pan, heat olive oil over medium heat.
  2. Add diced onion and minced garlic, sauté until fragrant.
  3. Add ground beef and cook until browned, breaking it apart with a spoon.
  4. Stir in the diced tomatoes and beef broth.
  5. Bring to a boil, then add the pasta shells.
  6. Reduce heat to a simmer, cover, and cook for 10-12 minutes or until pasta is tender.
  7. Stir in fresh spinach and cook until wilted.
  8. Season with salt and pepper to taste. Serve warm.
