Ingredients

  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 2 chicken sausages, sliced
  • 2 cups broccoli florets
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large pan, heat the olive oil over medium heat.
  2. Add the sliced chicken sausage and cook until browned.
  3. Toss in the minced garlic and cook for about a minute until fragrant.
  4. Stir in the orzo along with the chicken broth, and bring it all to a boil.
  5. Lower the heat to a simmer and add the broccoli.
  6. Cook for about 10-12 minutes, or until the orzo is tender and most of the liquid has been absorbed.
  7. Stir in the Parmesan cheese, then season with salt and pepper as needed.
  8. Serve warm and enjoy!

Notes

For a brighter flavor, add a squeeze of lemon juice before serving. Great served with garlic knots or a light salad.
