- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz egg noodles
- 4 tbsp real butter (or more if you’re feeling indulgent!)
- 4 cloves garlic, minced
- 2 cups low-sodium chicken broth
- ¼ cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a large skillet over medium-high heat, melt 1 tablespoon of butter. Add the chicken breasts and cook for about 5 minutes on each side until golden brown. Season with salt and pepper.
- Add minced garlic to the pan and sauté for about 1 minute until aromatic.
- Pour in the chicken broth and bring it to a boil.
- Stir in the egg noodles and reduce the heat. Simmer for 8-10 minutes until the noodles are al dente.
- Remove from heat. Stir in the remaining butter and garnish with fresh parsley before serving.
Notes
Feel free to toss in any vegetables on hand, such as broccoli or peas, to elevate the nutritional value.
