A delightful one-pan meal combining tender chicken and savory orzo pasta, enhanced with balsamic vinegar and fresh vegetables.


Ingredients

  • 1 pound chicken breast (boneless, skinless)
  • 1 cup orzo pasta
  • 2 cups chicken broth (low-sodium recommended)
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 onion, diced
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Season the chicken breast with salt and pepper. Add it to the skillet, cooking until golden brown on both sides, then remove and set aside.
  3. In the same skillet, add the diced onion, bell pepper, and zucchini. Sauté these veggies until they’re soft and fragrant.
  4. Sprinkle in the orzo and stir it around to absorb the flavors. Then pour in the chicken broth and balsamic vinegar.
  5. Return the browned chicken to the pan and bring everything to a simmer.
  6. Cover the skillet and let it cook for 15-20 minutes until the orzo is tender and the chicken is cooked through.
  7. Fold in the cherry tomatoes and let it cook for another 2 minutes.
  8. Remove from heat, garnish with fresh basil, and serve.

Notes

For vegetarian options, substitute chicken with chickpeas or tofu.
