- 1 pound chicken breast (boneless, skinless)
- 1 cup orzo pasta
- 2 cups chicken broth (low-sodium recommended)
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 onion, diced
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Season the chicken breast with salt and pepper. Add it to the skillet, cooking until golden brown on both sides, then remove and set aside.
- In the same skillet, add the diced onion, bell pepper, and zucchini. Sauté these veggies until they’re soft and fragrant.
- Sprinkle in the orzo and stir it around to absorb the flavors. Then pour in the chicken broth and balsamic vinegar.
- Return the browned chicken to the pan and bring everything to a simmer.
- Cover the skillet and let it cook for 15-20 minutes until the orzo is tender and the chicken is cooked through.
- Fold in the cherry tomatoes and let it cook for another 2 minutes.
- Remove from heat, garnish with fresh basil, and serve.
Notes
For vegetarian options, substitute chicken with chickpeas or tofu.
