Ingredients

  • 0.25 cup butter
  • 1 large onion, chopped
  • 6 potatoes, peeled and diced
  • 2 carrots, diced
  • 3 cups water
  • 2 tablespoons chicken bouillon powder
  • Ground black pepper to taste
  • 3 tablespoons all-purpose flour
  • 3 cups milk
  • 1 tablespoon dried parsley
  • 0.25 teaspoon dried thyme

Instructions

  1. Melting the butter in a saucepan over medium heat, add the chopped onion and sauté for about 5 minutes until softened and translucent.
  2. In a separate pot, combine the diced potatoes, carrots, water, and chicken bouillon. Bring to a boil and cook for around 10 minutes until tender.
  3. Season the pot with ground black pepper to your liking.
  4. Add the flour to the softened onions to create a paste, stirring constantly for about 2 minutes. Gradually pour in the milk while stirring, cooking over low heat until warmed through.
  5. Add in the potato and carrot mixture, stir in the dried parsley and thyme, then heat everything through. Serve hot and enjoy!

Notes

For a vegetarian version, swap the chicken bouillon with vegetable bouillon. You can also add a splash of heavy cream for richness, or experiment with ingredients like diced ham or corn for creative twists.
