- 0.25 cup butter
- 1 large onion, chopped
- 6 potatoes, peeled and diced
- 2 carrots, diced
- 3 cups water
- 2 tablespoons chicken bouillon powder
- Ground black pepper to taste
- 3 tablespoons all-purpose flour
- 3 cups milk
- 1 tablespoon dried parsley
- 0.25 teaspoon dried thyme
Instructions
- Melting the butter in a saucepan over medium heat, add the chopped onion and sauté for about 5 minutes until softened and translucent.
- In a separate pot, combine the diced potatoes, carrots, water, and chicken bouillon. Bring to a boil and cook for around 10 minutes until tender.
- Season the pot with ground black pepper to your liking.
- Add the flour to the softened onions to create a paste, stirring constantly for about 2 minutes. Gradually pour in the milk while stirring, cooking over low heat until warmed through.
- Add in the potato and carrot mixture, stir in the dried parsley and thyme, then heat everything through. Serve hot and enjoy!
Notes
For a vegetarian version, swap the chicken bouillon with vegetable bouillon. You can also add a splash of heavy cream for richness, or experiment with ingredients like diced ham or corn for creative twists.
