Description

Delicious and chewy oatmeal cookies filled with a sweet cream cheese filling, reminiscent of childhood favorites.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for the filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, stirring in the vanilla extract afterward.
  4. In another bowl, combine the flour, baking soda, cinnamon, and salt. Gradually add this dry mixture into the creamed butter mixture.
  5. Fold in the rolled oats until fully incorporated into the cookie dough.
  6. Using rounded tablespoons, drop the dough onto ungreased baking sheets, leaving about 2 inches of space between them.
  7. Bake for 10-12 minutes or until lightly golden around the edges.
  8. Allow the cookies to cool completely on the baking sheet.
  9. Meanwhile, prepare the filling by whisking together cream cheese, powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy.
  10. Spread the filling onto the flat side of half of the cookies before topping with the remaining cookies to create sandwiches.

Notes

For a lighter version, substitute unsweetened applesauce for a portion of the butter. These cookies are great with chocolate chips or nuts added.
