Ingredients

  • 1 pound white fish fillets (such as cod or tilapia)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fish stock or water
  • 1 cup diced tomatoes (canned or fresh)
  • 1 carrot, sliced
  • 1 celery stalk, chopped
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sauté until softened, about 3 to 5 minutes.
  3. Add diced tomatoes, sliced carrot, and chopped celery to the pot, stirring to combine.
  4. Pour in the fish stock or water and bring to a boil.
  5. Add thyme, and season with salt and pepper to taste.
  6. Reduce heat and simmer for about 15-20 minutes, until vegetables are tender.
  7. Add fish fillets and cook until the fish flakes easily with a fork, about 5-7 minutes.
  8. Serve hot, garnished with fresh parsley.
