Ingredients

- 1 pound white fish fillets (such as cod or tilapia)
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups fish stock or water
- 1 cup diced tomatoes (canned or fresh)
- 1 carrot, sliced
- 1 celery stalk, chopped
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and minced garlic, sauté until softened, about 3 to 5 minutes.
- Add diced tomatoes, sliced carrot, and chopped celery to the pot, stirring to combine.
- Pour in the fish stock or water and bring to a boil.
- Add thyme, and season with salt and pepper to taste.
- Reduce heat and simmer for about 15-20 minutes, until vegetables are tender.
- Add fish fillets and cook until the fish flakes easily with a fork, about 5-7 minutes.
- Serve hot, garnished with fresh parsley.
