Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the almond flour, baking soda, and salt.
- In another bowl, combine the melted coconut oil with honey (or your chosen sweetener), egg, and vanilla extract. Mix until smooth.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Gently fold in the sugar-free chocolate chips.
- Use a scoop to place dollops of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let the cookies cool for a few minutes before transferring them to a wire rack.
