Ingredients

  • 4 large eggs

  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup orange juice
  • 1/4 cup brandy or rum (optional)

Instructions

  1. Assemble all ingredients on a clean workspace.
  2. Chop dried fruits and nuts into bite-sized pieces.
  3. Cream butter and sugar together until light and fluffy (about 3 minutes).
  4. Add eggs one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  6. Gradually mix in dry ingredients with butter mixture, alternating with orange juice until combined.
  7. Fold in chopped dried fruits and nuts.
  8. Grease and line a 9×5-inch loaf pan with parchment paper.
  9. Pour batter into the prepared pan and smooth the top.
  10. Bake in a preheated oven at 325°F (160°C) for 60-75 minutes, or until a toothpick comes out clean.

Notes

For enhanced flavor, soak dried fruits in rum or brandy overnight. Serve dusted with powdered sugar or with whipped cream.
