Mother’s Comforting Peasant Bread

Description

A simple and heartwarming recipe for homemade peasant bread, perfect for any meal.


Ingredients

Scale
  • 4 cups (512 g) unbleached all-purpose or bread flour
  • 2 teaspoons (10 g) kosher salt
  • 2 cups (454 g) lukewarm water
  • 2 teaspoons (8 g) sugar
  • 2 teaspoons (8 g) instant yeast
  • About 2 tablespoons room temperature butter (for greasing)

Instructions

  1. In a large bowl, whisk together the flour, salt, sugar, and instant yeast.
  2. Pour in the lukewarm water, mixing until all the flour is absorbed.
  3. Cover the bowl and let the dough rise in a warm spot for at least one hour, or two if it’s cooler.
  4. If needed, preheat your oven for a minute and then turn it off, creating a warm environment.
  5. Preheat your oven to 425ºF (220ºC).
  6. Grease two 1-quart or 1.5-quart oven-safe bowls with about one tablespoon of butter each.
  7. Punch down the dough gently with two forks, scraping it away from the sides of the bowl.
  8. Divide the dough into two equal portions by pulling it apart with the forks.
  9. Scoop each portion into a prepared bowl and allow to rise uncovered for 20 to 30 minutes, or until just above the bowl tops.
  10. Bake for 15 minutes at 425ºF, then reduce the temperature to 375ºF and bake for an additional 15-17 minutes.
  11. If the loaves appear pale or soft, return them to the oven (out of the bowls) for about 5 minutes more.
  12. Cool the bread for 10 minutes before slicing.

Notes

Store the bread in a breadbox or wrapped in a kitchen towel for 2-3 days. For freezing, wrap in plastic wrap and aluminum foil for up to 3 months.
