Ingredients

- 2 cups mushrooms (such as cremini, shiitake, or portobello), chopped
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 onion, diced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can (14 oz) diced tomatoes
- 1 cup vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, for garnish
- Pasta of your choice (tagliatelle, pappardelle, etc.)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the diced onions, carrots, and celery. Sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the chopped mushrooms to the skillet. Cook until they release their liquid and become tender, about 5-7 minutes.
- Mix in the diced tomatoes, vegetable broth, tomato paste, dried thyme, dried oregano, salt, and pepper. Stir together to combine.
- Bring the mixture to a simmer and let it cook for about 20-25 minutes, stirring occasionally, until the sauce thickens.
- While the ragu simmers, cook your pasta according to the package instructions.
- Serve the Mushroom Ragu over the cooked pasta and garnish with fresh parsley.
Notes
You can customize this ragu by using different mushrooms or adding greens for extra nutrition. It’s also great as leftovers!
