These adorable mini cheesecakes are perfect for any occasion, featuring a creamy filling balanced by a crunchy graham cracker crust and topped with colorful M&M’s.

- 1 cup crushed graham crackers
- 5 Tbsp unsalted butter, melted
- 1 ½ cups heavy cream
- 1 tsp vanilla extract
- 1 (8 oz) block cream cheese, room temperature
- 1 cup powdered sugar
- 1 cup crushed Valentine’s M&M’s (or regular M&M’s)
Instructions
- Prepare the crust by combining crushed graham crackers with melted butter until resembling wet sand. Line a muffin tin with cupcake liners and press the mixture into each liner.
- Using an electric mixer, whip the heavy cream and vanilla extract until soft peaks form.
- Incorporate the room-temperature cream cheese with the whipped cream, whisking until smooth.
- Gradually add powdered sugar and crushed M&M’s, folding gently until mixed.
- Spoon the cream cheese mixture over the crusts, filling to the top and adding more crushed M&M’s on top for decoration.
- Freeze the mini cheesecakes for at least 2 hours until firm.

Store in the freezer for up to two weeks, or in the refrigerator for a few days. Allow to sit at room temperature before serving for best texture.
