Description

These adorable mini cheesecakes are perfect for any occasion, featuring a creamy filling balanced by a crunchy graham cracker crust and topped with colorful M&M’s.


Ingredients

  • 1 cup crushed graham crackers
  • 5 Tbsp unsalted butter, melted
  • 1 ½ cups heavy cream
  • 1 tsp vanilla extract
  • 1 (8 oz) block cream cheese, room temperature
  • 1 cup powdered sugar
  • 1 cup crushed Valentine’s M&M’s (or regular M&M’s)

Instructions

  1. Prepare the crust by combining crushed graham crackers with melted butter until resembling wet sand. Line a muffin tin with cupcake liners and press the mixture into each liner.
  2. Using an electric mixer, whip the heavy cream and vanilla extract until soft peaks form.
  3. Incorporate the room-temperature cream cheese with the whipped cream, whisking until smooth.
  4. Gradually add powdered sugar and crushed M&M’s, folding gently until mixed.
  5. Spoon the cream cheese mixture over the crusts, filling to the top and adding more crushed M&M’s on top for decoration.
  6. Freeze the mini cheesecakes for at least 2 hours until firm.

Store in the freezer for up to two weeks, or in the refrigerator for a few days. Allow to sit at room temperature before serving for best texture.
