Description

A warm and hearty casserole filled with tender shredded chicken, zesty spices, and creamy toppings, layered with crunchy tortilla chips and melty cheese.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups crushed tortilla chips
  • 2 cups shredded cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the shredded chicken, black beans, corn, diced tomatoes, taco seasoning, and sour cream until well combined.
  3. In a greased casserole dish, layer half of the crushed tortilla chips, followed by the chicken mixture.
  4. Sprinkle half of the cheese on top.
  5. Repeat the layers with the remaining tortilla chips, chicken mixture, and cheese.
  6. Gently press down the layers.
  7. Bake in the preheated oven for 30 minutes or until the cheese is melted and bubbly.
  8. Remove from the oven and top with chopped green onions, salt, and pepper.
  9. Let it cool for a few minutes before serving.

Notes

Consider using leftover chicken for convenience. This casserole can be customized with different ingredients and toppings.
