- 2 cups shredded cooked chicken
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups crushed tortilla chips
- 2 cups shredded cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the shredded chicken, black beans, corn, diced tomatoes, taco seasoning, and sour cream until well combined.
- In a greased casserole dish, layer half of the crushed tortilla chips, followed by the chicken mixture.
- Sprinkle half of the cheese on top.
- Repeat the layers with the remaining tortilla chips, chicken mixture, and cheese.
- Gently press down the layers.
- Bake in the preheated oven for 30 minutes or until the cheese is melted and bubbly.
- Remove from the oven and top with chopped green onions, salt, and pepper.
- Let it cool for a few minutes before serving.
Notes
Consider using leftover chicken for convenience. This casserole can be customized with different ingredients and toppings.
