- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 6 tortillas, cut into strips
- 2 cups shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Stir in the black beans, corn, salsa, salt, and pepper.
- In a baking dish, layer half of the tortillas, followed by half of the beef mixture, and half of the cheese. Repeat the layers.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
Ground beef: Choose lean (85% to 90%) for a balanced casserole. Adjust spices to personal taste.
