- 2 lbs beef chuck roast
- 3 dried guajillo chiles
- 3 dried ancho chiles
- 1 onion, quartered
- 4 cloves garlic
- 2 tsp ground cumin
- 2 tsp dried oregano
- 2 bay leaves
- 4 cups beef broth
- Salt and pepper to taste
- Fresh cilantro for garnish
- Chopped onion for garnish
- Lime wedges for serving
- Corn tortillas (for making tacos)
Instructions
- Preheat your large pot or Dutch oven over medium heat.
- Toast the guajillo and ancho chiles in the pot for about 2-3 minutes until fragrant.
- Remove stems and seeds from the chiles, then blend them with the onion, garlic, cumin, oregano, and a bit of beef broth until smooth.
- Season the beef roast with salt and pepper in the pot.
- Pour the blended sauce over the beef, add the remaining beef broth and bay leaves.
- Bring to a gentle boil, reduce heat to low, cover, and let it simmer for 3-4 hours until tender.
- Shred the beef using two forks.
- For Tacos, dip corn tortillas into the broth, fill with shredded beef, and garnish with cilantro and onion.
- Serve with lime wedges.
Notes
For enhanced flavor, marinate the beef in the blended sauce for a few hours or overnight before cooking.
