Description

Ingredients

  • 2 lbs beef chuck roast
  • 3 dried guajillo chiles
  • 3 dried ancho chiles
  • 1 onion, quartered
  • 4 cloves garlic
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 2 bay leaves
  • 4 cups beef broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Chopped onion for garnish
  • Lime wedges for serving
  • Corn tortillas (for making tacos)

Instructions

  1. Preheat your large pot or Dutch oven over medium heat.
  2. Toast the guajillo and ancho chiles in the pot for about 2-3 minutes until fragrant.
  3. Remove stems and seeds from the chiles, then blend them with the onion, garlic, cumin, oregano, and a bit of beef broth until smooth.
  4. Season the beef roast with salt and pepper in the pot.
  5. Pour the blended sauce over the beef, add the remaining beef broth and bay leaves.
  6. Bring to a gentle boil, reduce heat to low, cover, and let it simmer for 3-4 hours until tender.
  7. Shred the beef using two forks.
  8. For Tacos, dip corn tortillas into the broth, fill with shredded beef, and garnish with cilantro and onion.
  9. Serve with lime wedges.

Notes

For enhanced flavor, marinate the beef in the blended sauce for a few hours or overnight before cooking.
