- ½ cup kalamata olives (pitted)
- ⅓ cup feta cheese (crumbled; omit for dairy-free)
- ¼ cup fresh herbs (parsley or dill, chopped)
- 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
- ½ cucumber (grated, squeezed dry)
- 1 tbsp fresh dill (chopped)
- 1 tbsp honey (omit for Whole30)
Instructions
- Marinate the Steak: In a mixing bowl, combine olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and pepper. Add the sirloin steak, coating it well. Refrigerate for 30 minutes to 4 hours.
- Make the Tzatziki Sauce: In another bowl, mix Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, and a pinch of salt and pepper. Chill until ready to serve.
- Prepare the Vinaigrette: Whisk together olive oil, lemon juice, honey (if using), minced garlic, oregano, salt, and pepper in a small bowl. Set aside.
- Sear the Steak: Heat a skillet over high heat and sear the marinated steak for 4-5 minutes on each side, or until it reaches desired doneness. Let the steak rest for a few minutes before slicing it thinly.
- Assemble Your Bowl: Begin with a base of cooked grains. Top with sliced steak, fresh veggies, olives, and feta cheese (if using). Drizzle with tzatziki sauce and vinaigrette before serving.
