- 3 tbsp olive oil, divided
- 2 garlic cloves (minced)
- 1 tbsp lemon juice (fresh)
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp salt
- ¼ tsp black pepper
- 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
- 1 cup roasted chickpeas (optional for paleo or keto)
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- ½ red onion (thinly sliced)
- ½ cup kalamata olives (pitted)
- ⅓ cup feta cheese (crumbled; optional for dairy-free)
- ¼ cup fresh herbs (parsley or dill, chopped)
- 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
- 1 cucumber (grated, squeezed dry)
- 1 tbsp lemon juice (fresh)
- 1 garlic clove (minced)
- 1 tbsp fresh dill (chopped)
- Salt & pepper (to taste)

Instructions
- Marinate the Steak: In a bowl, mix 3 tablespoons of olive oil, minced garlic, 1 tablespoon of lemon juice, oregano, thyme, salt, and pepper. Coat the steak evenly with the marinade. Let it marinate for 30 minutes to 4 hours for the best results.
- Prepare Tzatziki: In a separate bowl, combine the Greek yogurt, grated cucumber, 1 tablespoon lemon juice, minced garlic, fresh dill, salt, and pepper. Mix well and chill in the fridge.
- Make Vinaigrette: Whisk together the remaining olive oil, lemon juice, honey, minced garlic, oregano, salt, and pepper in a small bowl.
- Cook the Steak: Sear the marinated steak in a hot skillet over medium-high heat for about 4-5 minutes on each side for medium-rare. After cooking, let it rest for about 5 minutes before slicing thinly.
- Assemble Your Bowl: Layer your choice of cooked grains, sliced steak, and toppings, including cherry tomatoes, cucumber, red onion, olives, and feta cheese. Finish with a generous dollop of tzatziki and drizzle with vinaigrette.
