Description

Quick and delicious Mediterranean quesadillas packed with spinach, feta, and mozzarella, perfect for busy weeknights.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon olive oil
  • Black pepper, to taste

Instructions

  1. In a mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, red onion, and black pepper. Mix well until ingredients are evenly distributed.
  2. Lay one tortilla flat on a clean surface. Place a quarter of the filling mixture on one half of the tortilla, then fold the other half over to cover the filling.
  3. Heat a non-stick skillet over medium heat, and add the olive oil.
  4. Carefully place the filled tortilla in the skillet. Cook for about 3-4 minutes until the bottom is golden brown, then flip and cook the other side for another 3-4 minutes until crispy.
  5. Remove from heat, slice the quesadilla into wedges, and serve warm.

Notes

Serve with tzatziki sauce, a salad, or chilled white wine for a perfect meal.
