Mediterranean quesadillas are a delightful fusion of fresh spinach, tangy feta, and gooey mozzarella, encased in a perfectly crisp tortilla, perfect for any casual meal.

- 4 flour tortillas
- 1 cup fresh spinach, chopped
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato, diced
- 1/4 cup red onion, thinly sliced
- 1 tablespoon olive oil
- Black pepper, to taste
Instructions
- In a mixing bowl, add mozzarella cheese, feta cheese, chopped spinach, diced tomato, sliced red onion, and a sprinkle of black pepper. Stir until well-combined.
- Lay one tortilla flat on your workspace. Place one-fourth of the filling mixture onto one half of the tortilla and fold it over.
- Heat a non-stick skillet over medium heat and add olive oil.
- Carefully place the filled tortilla in the skillet. Cook for about 3-4 minutes until one side is golden brown and crispy.
- Flip the quesadilla gently and cook for another 3-4 minutes until both sides are nicely crisped up.
- Once done, remove from heat, slice into wedges, and serve warm.
Notes
Serve with sautéed veggies, a fresh garden salad, or a dollop of tzatziki. Leftovers can be stored in an airtight container for up to 3 days.
