- 4 pieces boneless, skinless chicken breasts
- 2 medium zucchini, sliced into half-moons
- 1 cup cherry tomatoes, halved
- 1 medium red onion, thinly sliced
- 3 cloves garlic, minced

- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon smoked paprika
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Generously grease a 9×13-inch baking dish with olive oil.
- Combine the chicken breasts, sliced zucchini, halved cherry tomatoes, sliced red onion, and minced garlic in a large mixing bowl.
- Drizzle with olive oil and add all seasonings: oregano, basil, smoked paprika, salt, black pepper, and optional red pepper flakes. Toss everything together until evenly coated.
- Spread the mixture evenly in the prepared baking dish, arranging chicken breasts to avoid overlap and nesting the vegetables around and on top of the chicken.
- Sprinkle mozzarella and Parmesan evenly over the entire dish.
- Cover tightly with aluminum foil and bake for 20 minutes. Remove the foil and continue baking for an additional 10-15 minutes, until the cheese is golden brown and bubbly, and the chicken reaches an internal temperature of 165°F (75°C).
- Let the dish rest for about 5 minutes before serving. Garnish with fresh chopped parsley.

For best flavor, consider marinating the chicken in olive oil and herbs before cooking. Pair with garlic bread or a side salad for a complete meal.
