  • 4 pieces boneless, skinless chicken breasts
  • 2 medium zucchini, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil (or avocado oil)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Generously grease a 9×13-inch baking dish with olive oil.
  2. Combine the chicken breasts, sliced zucchini, halved cherry tomatoes, sliced red onion, and minced garlic in a large mixing bowl.
  3. Drizzle with olive oil and add all seasonings: oregano, basil, smoked paprika, salt, black pepper, and optional red pepper flakes. Toss everything together until evenly coated.
  4. Spread the mixture evenly in the prepared baking dish, arranging chicken breasts to avoid overlap and nesting the vegetables around and on top of the chicken.
  5. Sprinkle mozzarella and Parmesan evenly over the entire dish.
  6. Cover tightly with aluminum foil and bake for 20 minutes. Remove the foil and continue baking for an additional 10-15 minutes, until the cheese is golden brown and bubbly, and the chicken reaches an internal temperature of 165°F (75°C).
  7. Let the dish rest for about 5 minutes before serving. Garnish with fresh chopped parsley.

Notes

For best flavor, consider marinating the chicken in olive oil and herbs before cooking. Pair with garlic bread or a side salad for a complete meal.
