Description

A vibrant and healthy Mediterranean Chicken Stir Fry with juicy chicken, colorful vegetables, and robust seasonings, perfect for busy weeknights or casual gatherings.


Ingredients

  • 1.5 lbs Chicken breasts, boneless & skinless (Cut into bite-sized pieces)
  • 3 tbsp Extra virgin olive oil (Divided for cooking)
  • Salt & black pepper (To taste)
  • 2 medium Zucchini (Sliced into half-moons)
  • 2 Red bell peppers (Diced into chunks)
  • 1 large Red onion (Sliced into strips)
  • 2 cups Cherry tomatoes (Halved)
  • 1 cup Kalamata olives (Pitted and halved)
  • 4 cloves Garlic (Minced)
  • 1/4 cup Sun-dried tomatoes (Chopped)
  • 2 tsp Dried oregano
  • 1 tsp Dried basil
  • 1/2 tsp Dried thyme
  • 1 Lemon (Juice only)
  • 0.5 cup Feta cheese (Crumbled)
  • 2 tbsp Fresh parsley (Optional garnish)

Instructions

  1. Preheat a large skillet over medium-high heat. Add 2 tablespoons of olive oil.
  2. Season the chicken pieces with salt and black pepper. Once the oil is hot, sear the chicken for about 5-7 minutes or until golden brown and fully cooked.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the remaining olive oil and toss in the sliced red onion and minced garlic. Sauté until the onion is soft.
  5. Add the diced zucchini and red bell peppers, cooking for another 3-4 minutes until they start to soften.
  6. Stir in the cherry tomatoes, Kalamata olives, sun-dried tomatoes, and dried herbs. Cook for an additional 2 minutes to meld the flavors.
  7. Return the cooked chicken to the pan and pour in the lemon juice. Stir everything together until well mixed.
  8. Remove from heat and top with crumbled feta cheese and fresh parsley before serving.

Notes

Feel free to swap vegetables based on preference. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
