A quick and colorful Mediterranean Chicken Stir Fry packed with vibrant flavors and nutritious vegetables.
Ingredients

- 1.5 lbs Chicken breasts, boneless & skinless (cut into bite-sized pieces)
- 3 tbsp Extra virgin olive oil (divided for cooking)
- Salt & black pepper (to taste)
- 2 medium Zucchini (sliced into half-moons)
- 2 Red bell peppers (diced into chunks)
- 1 large Red onion (sliced into strips)
- 2 cups Cherry tomatoes (halved)
- 1 cup Kalamata olives (pitted and halved)
- 4 cloves Garlic (minced)
- 1/4 cup Sun-dried tomatoes (chopped)
- 2 tsp Dried oregano
- 1 tsp Dried basil
- 1/2 tsp Dried thyme
- 1 Lemon (juice only)
- 0.5 cup Feta cheese (crumbled)
- 2 tbsp Fresh parsley (optional for garnish)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Season the chicken pieces with salt and pepper, then add them to the skillet. Sear until golden brown and cooked through, about 7-10 minutes. Remove the chicken and set aside.
- In the same skillet, add another tablespoon of olive oil. Sauté the onions and garlic until fragrant, about 2-3 minutes.
- Add zucchini, bell peppers, cherry tomatoes, and sun-dried tomatoes. Cook until the vegetables are tender, around 5-7 minutes.
- Return the chicken to the skillet. Sprinkle in the dried oregano, basil, and thyme. Toss everything together and let the flavors meld for another 2-3 minutes.
- Remove from heat, then stir in lemon juice, Kalamata olives, and crumbled feta cheese. Mix well.
- Serve warm, garnished with fresh parsley if desired.
Notes
For added flavor, marinate the chicken in olive oil, garlic, and herbs for a couple of hours before cooking. You can also add a splash of white wine while sautéing the vegetables.
