Mediterranean Chicken Stir Fry

Description

A quick and colorful Mediterranean Chicken Stir Fry packed with vibrant flavors and nutritious vegetables.


Ingredients

  • 1.5 lbs Chicken breasts, boneless & skinless (cut into bite-sized pieces)
  • 3 tbsp Extra virgin olive oil (divided for cooking)
  • Salt & black pepper (to taste)
  • 2 medium Zucchini (sliced into half-moons)
  • 2 Red bell peppers (diced into chunks)
  • 1 large Red onion (sliced into strips)
  • 2 cups Cherry tomatoes (halved)
  • 1 cup Kalamata olives (pitted and halved)
  • 4 cloves Garlic (minced)
  • 1/4 cup Sun-dried tomatoes (chopped)
  • 2 tsp Dried oregano
  • 1 tsp Dried basil
  • 1/2 tsp Dried thyme
  • 1 Lemon (juice only)
  • 0.5 cup Feta cheese (crumbled)
  • 2 tbsp Fresh parsley (optional for garnish)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Season the chicken pieces with salt and pepper, then add them to the skillet. Sear until golden brown and cooked through, about 7-10 minutes. Remove the chicken and set aside.
  3. In the same skillet, add another tablespoon of olive oil. Sauté the onions and garlic until fragrant, about 2-3 minutes.
  4. Add zucchini, bell peppers, cherry tomatoes, and sun-dried tomatoes. Cook until the vegetables are tender, around 5-7 minutes.
  5. Return the chicken to the skillet. Sprinkle in the dried oregano, basil, and thyme. Toss everything together and let the flavors meld for another 2-3 minutes.
  6. Remove from heat, then stir in lemon juice, Kalamata olives, and crumbled feta cheese. Mix well.
  7. Serve warm, garnished with fresh parsley if desired.

Notes

For added flavor, marinate the chicken in olive oil, garlic, and herbs for a couple of hours before cooking. You can also add a splash of white wine while sautéing the vegetables.
