- For the Salad:
- 14 to 16 ounces romaine leaf lettuce (chopped)
- 1 cup kalamata olives (sliced)
- 1 cup pepperoncinis
- 2 cups cherry tomatoes (halved)
- 2 cups salami (cut into strips)
- ½ cup red onion (thinly sliced)
- 6 ounces grated parmesan cheese (to taste)
Instructions
- In a small bowl or measuring cup, mix the dressing ingredients until well combined. Set aside.
- Chop the romaine lettuce, cherry tomatoes, and red onion.
- In a large mixing bowl, combine the lettuce, kalamata olives, pepperoncinis, cherry tomatoes, salami, and red onion.
- Drizzle your desired amount of the dressing over the salad and toss gently to combine.
- Adjust seasoning, adding more parmesan or dressing to taste.
- Serve immediately, or store any leftovers in a mason jar for up to two weeks.
Notes
For the best texture, store the dressing separately and add it just before serving. Consider marinating the salami in the dressing for extra flavor.
