  • 1 cup shredded sharp cheddar cheese
  • 2 large eggs
  • 1/2 cup all-purpose flour

Instructions

  1. If using fresh potatoes, boil them until fork-tender, then mash with butter and cream until smooth. For leftovers, simply reheat until warm.
  2. In a large bowl, combine the warm mashed potatoes, cheddar cheese, eggs, flour, salt, and pepper. Mix until everything is well combined.
  3. Scoop out the mixture into golf ball-sized portions.
  4. Preheat your oven to 375°F (190°C) for baking or heat oil in a deep fryer.
  5. Bake for 20–25 minutes or fry until golden brown and crispy.
