- 1 cup heavy cream
- 1 cup spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they become translucent.
- Toss in the chopped carrots, celery, and red bell pepper. Cook until the vegetables are softened.
- Stir in the diced chicken and cook until it’s browned on all sides.
- Pour in the chicken broth and bring the mixture to a gentle simmer.
- Reduce the heat, then add heavy cream, spinach, Italian seasoning, salt, and pepper. Stir well!
- Allow the soup to simmer for 10-15 minutes, stirring occasionally.
- Serve hot, garnished with freshly grated Parmesan cheese.
Notes
