Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they become translucent.
  2. Toss in the chopped carrots, celery, and red bell pepper. Cook until the vegetables are softened.
  3. Stir in the diced chicken and cook until it’s browned on all sides.
  4. Pour in the chicken broth and bring the mixture to a gentle simmer.
  5. Reduce the heat, then add heavy cream, spinach, Italian seasoning, salt, and pepper. Stir well!
  6. Allow the soup to simmer for 10-15 minutes, stirring occasionally.
