- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1/2 cup heavy cream
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken breasts with salt and pepper. Add to the skillet and cook until golden brown, about 6-7 minutes on each side. Remove and set aside.
- In the same skillet, add minced garlic and sauté until fragrant.
- Pour in the diced tomatoes, followed by the heavy cream, dried oregano, and dried basil. Stir until well combined.
- Return the chicken to the skillet and let it simmer in the sauce for about 5 minutes.
- Before serving, top with fresh basil for a vibrant touch.
Notes
Consider using fresh tomatoes if in season or substituting coconut cream for a dairy-free twist. Pair with rice or pasta to soak up the sauce.
