Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1/2 cup heavy cream
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with salt and pepper. Add to the skillet and cook until golden brown, about 6-7 minutes on each side. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté until fragrant.
  4. Pour in the diced tomatoes, followed by the heavy cream, dried oregano, and dried basil. Stir until well combined.
  5. Return the chicken to the skillet and let it simmer in the sauce for about 5 minutes.
  6. Before serving, top with fresh basil for a vibrant touch.

Notes

Consider using fresh tomatoes if in season or substituting coconut cream for a dairy-free twist. Pair with rice or pasta to soak up the sauce.
