- 1 cup buttermilk

- 2 tablespoons melted unsalted butter
- ½ cup cooked and crumbled bacon
Instructions
- Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin or line it with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well mixed.
- In a separate medium bowl, whisk the egg, buttermilk, maple syrup, and melted butter until combined.
- Gently pour the wet ingredients into the dry ingredients. Stir together just until combined; a few lumps are fine—don’t overmix!
- Fold in the cooked and crumbled bacon for that irresistible savory kick.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 15-18 minutes until golden brown, and test with a toothpick for doneness.
- Remove them from the tin and let them cool on a wire rack for a few minutes.
- Serve warm with extra maple syrup for dipping or drizzling.
