Delightful low-carb biscotti made with almond flour, perfect for snacks or coffee breaks.
Ingredients

- 2 cups almond flour
- 1/2 cup erythritol (or another low-carb sweetener)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped nuts or sugar-free chocolate chips (optional)
Instructions
- Preheat your oven to 325°F (160°C) and prepare a baking sheet with parchment paper.
- In a mixing bowl, whisk together almond flour, erythritol, baking powder, and salt.
- In a separate bowl, whisk the eggs together with vanilla extract until combined.
- Pour the wet mix into the dry ingredients and stir until everything is well-incorporated. If you’re adding nuts or chocolate chips, fold them in now.
- Shape the mixture into a long log on the prepared baking sheet, flattening it slightly to form a rectangle.
- Bake for 20-25 minutes until golden brown. Remove from the oven and let it cool for 10 minutes.
- Slice the log into biscotti pieces, placing them cut-side down on the baking sheet.
- Return to the oven and bake for an additional 10-15 minutes until crisp. Allow to cool completely before enjoying!
Notes
Store in an airtight container at room temperature for up to a week, or refrigerate for two weeks. They can also be frozen for up to three months.
