- 2 medium zucchinis
- 1 cup whole wheat breadcrumbs (or Panko for extra crunch)
- 1/2 cup grated Parmesan cheese
- 1 egg (or a flax egg for a vegan alternative)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Cooking spray or olive oil (for extra crispness)
Instructions
- Preheat your air fryer to 400°F (204°C).
- Cut the zucchinis into sticks, about 1/4 inch thick.
- In a bowl, mix the breadcrumbs, Parmesan, garlic powder, salt, and pepper.
- In another bowl, beat the egg (or prepare your flax egg).
- Dip each zucchini stick into the egg, then roll it in the breadcrumb mixture until fully coated.
- Arrange the coated zucchini in the air fryer basket, making sure they are in a single layer.
- Spray lightly with cooking spray or drizzle with olive oil.
- Air fry for 12-15 minutes, flipping halfway through, until golden brown and crispy.
Notes
