- 4 boneless skinless chicken breasts
- 1 cup bread crumbs
- 1 cup grated Parmesan cheese (divided)
- 1 cup shredded mozzarella cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup milk
- 2 cloves minced garlic
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In one dish, combine the breadcrumbs, half of the grated Parmesan, Italian seasoning, salt, and black pepper.
- In a second dish, whisk together the eggs and milk.
- Place the flour in a third dish.
- Dredge each chicken breast first in the flour, then dip it into the egg mixture, and finally coat it with the breadcrumb mixture.
- Heat the olive oil in a skillet over medium heat. Sear the chicken for about 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish.
- In a small bowl, mix the remaining Parmesan with the shredded mozzarella and minced garlic. Sprinkle this mixture generously over the chicken.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly.
Notes
For a healthier twist, consider using whole wheat breadcrumbs or reduced-fat mozzarella. Store leftovers in an airtight container in the refrigerator for 3-4 days.
