Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves minced garlic
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In one dish, combine the breadcrumbs, half of the grated Parmesan, Italian seasoning, salt, and black pepper.
  3. In a second dish, whisk together the eggs and milk.
  4. Place the flour in a third dish.
  5. Dredge each chicken breast first in the flour, then dip it into the egg mixture, and finally coat it with the breadcrumb mixture.
  6. Heat the olive oil in a skillet over medium heat. Sear the chicken for about 3-4 minutes on each side until golden brown.
  7. Transfer the chicken to a baking dish.
  8. In a small bowl, mix the remaining Parmesan with the shredded mozzarella and minced garlic. Sprinkle this mixture generously over the chicken.
  9. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly.

Notes

For a healthier twist, consider using whole wheat breadcrumbs or reduced-fat mozzarella. Store leftovers in an airtight container in the refrigerator for 3-4 days.
