  • 4 boneless skinless chicken breasts
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a shallow dish, combine the bread crumbs, half of the Parmesan cheese, Italian seasoning, salt, and pepper.
  3. In a separate bowl, beat the eggs and milk together.
  4. Place flour in a third shallow dish.
  5. Dredge each chicken breast first in the flour, then in the egg mixture, and finally in the breadcrumb mixture for an even coating.
  6. In a large skillet, heat olive oil over medium heat. Sauté the chicken for 3-4 minutes on each side or until golden-brown.
  7. Transfer the cooked chicken to a baking dish.
  8. In a bowl, mix remaining Parmesan cheese with mozzarella and minced garlic. Top the chicken with this cheesy mixture.
  9. Bake for 20-25 minutes or until the chicken is cooked through (internal temperature should reach 165°F/74°C).

Notes

For extra crunch, consider adding panko breadcrumbs to the mix. Always use a meat thermometer to ensure your chicken is fully cooked.
