- 4 large russet potatoes, peeled and cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth (or vegetable broth for a vegetarian twist)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup crispy bacon, crumbled
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pot, sauté the chopped onion and minced garlic over medium heat until they become translucent.
- Add the cubed potatoes and pour in the chicken broth. Bring to a boil.
- Reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
- Use a potato masher to mash some of the potatoes right in the pot for a creamier texture; keep some chunks for a heartier mouthfeel.
- Stir in the heavy cream, shredded cheddar cheese, and half of the crispy bacon.
- Season with salt and pepper to taste.
- Serve hot, garnished with the remaining bacon and chopped green onions.
