Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth (or vegetable broth for a vegetarian twist)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup crispy bacon, crumbled
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a large pot, sauté the chopped onion and minced garlic over medium heat until they become translucent.
  2. Add the cubed potatoes and pour in the chicken broth. Bring to a boil.
  3. Reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
  4. Use a potato masher to mash some of the potatoes right in the pot for a creamier texture; keep some chunks for a heartier mouthfeel.
  5. Stir in the heavy cream, shredded cheddar cheese, and half of the crispy bacon.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with the remaining bacon and chopped green onions.
