Description

A comforting, creamy soup filled with tender potatoes, cheese, and bacon, perfect for chilly nights and family gatherings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth (or vegetable broth for a vegetarian option)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat a drizzle of oil over medium heat. Sauté the chopped onion and minced garlic until softened, about 3-5 minutes.
  2. Add diced potatoes and pour in the chicken broth. Bring to a boil, then reduce to a simmer and cook until potatoes are tender, about 15-20 minutes.
  3. Use a potato masher to crush some of the potatoes in the pot.
  4. Stir in heavy cream, shredded cheddar cheese, and crumbled bacon. Mix until cheese is melted.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped green onions.

Notes

For a lighter version, use turkey bacon or half-and-half instead of heavy cream. Can be frozen for up to 3 months.
