- 4 large potatoes, peeled and diced
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 4 cups chicken broth (or vegetable broth for a vegetarian option)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, heat a drizzle of oil over medium heat. Sauté the chopped onion and minced garlic until softened, about 3-5 minutes.
- Add diced potatoes and pour in the chicken broth. Bring to a boil, then reduce to a simmer and cook until potatoes are tender, about 15-20 minutes.
- Use a potato masher to crush some of the potatoes in the pot.
- Stir in heavy cream, shredded cheddar cheese, and crumbled bacon. Mix until cheese is melted.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
For a lighter version, use turkey bacon or half-and-half instead of heavy cream. Can be frozen for up to 3 months.
