- 4 large potatoes, peeled and diced
- 1/2 cup bacon, cooked and crumbled
- 1 cup cheddar cheese, shredded
- 1 cup sour cream
- 4 cups chicken broth
- 1/2 cup milk (or a dairy-free alternative)
- 1/2 onion, diced
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pot, cook the diced onion with a bit of oil until it’s soft and translucent, about 5 minutes.
- Add the diced potatoes and chicken broth, then bring it to a boil.
- Lower the heat and simmer until the potatoes become tender, about 15-20 minutes.
- For a creamy thickness, mash some of the potatoes directly in the pot with a potato masher.
- Stir in the milk, crispy bacon, cheddar cheese, and sour cream until well combined.
- Season with salt and pepper, mix well, and allow to heat through.
- Serve hot, garnished with green onions for a fresh touch!
Notes
