Description

A rich and creamy soup that combines the heartiness of baked potatoes with bacon, cheese, and sour cream, perfect for chilly nights.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1/2 cup bacon, cooked and crumbled
  • 1 cup cheddar cheese, shredded
  • 1 cup sour cream
  • 4 cups chicken broth
  • 1/2 cup milk (or a dairy-free alternative)
  • 1/2 onion, diced
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a large pot, cook the diced onion with a bit of oil until it’s soft and translucent, about 5 minutes.
  2. Add the diced potatoes and chicken broth, then bring it to a boil.
  3. Lower the heat and simmer until the potatoes become tender, about 15-20 minutes.
  4. For a creamy thickness, mash some of the potatoes directly in the pot with a potato masher.
  5. Stir in the milk, crispy bacon, cheddar cheese, and sour cream until well combined.
  6. Season with salt and pepper, mix well, and allow to heat through.
  7. Serve hot, garnished with green onions for a fresh touch!
