Delicious crispy potato rounds topped with gooey cheese, crunchy bacon, and fresh green onions, perfect for parties or as a delightful snack.

- 4 large Russet potatoes
- 6 slices of bacon
- 3/4 teaspoon salt
- 3/4 teaspoon freshly cracked pepper
- 8 oz block sharp cheddar cheese, grated
- 3 green onions, sliced
- Sour cream for serving
- Finishing salt to taste (e.g., fleur de sel)
Instructions
- Preheat your oven to 400°F. Lay the bacon strips on a parchment-lined baking sheet.
- Bake for 20 minutes or until crispy. Once done, set aside and use paper towels to remove any excess grease. Reserve 2 tablespoons of the remaining bacon fat.
- While the bacon cooks, scrub the potatoes until clean and slice them into 1/2 inch rounds.
- In a large bowl, combine the potato rounds with salt, pepper, and the reserved bacon fat. Toss well to coat evenly.
- Reduce the oven temperature to 375°F. Arrange the potato slices on the baking sheet about 1 inch apart. Bake for 20 minutes.
- As the potatoes bake, shred the cheddar cheese, slice green onions, and dice the crispy bacon.
- After baking, lower the oven to 350°F. Add 1 tablespoon of cheese and a pinch of bacon to each potato slice. Bake for an additional 8-10 minutes or until the cheese melts.
- Once out of the oven, sprinkle with green onions and a bit of finishing salt. Serve hot with sour cream or ranch dressing for dipping.
Notes
Refrigerate leftovers in an airtight container for up to 3 days. For longer storage, freeze cooked slices for up to 1 month. Reheat in the oven for best texture.
