Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter (or your favorite nut butter)
  • 1/4 cup maple syrup
  • 1/4 cup lemon juice
  • 2 tablespoons poppy seeds
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Zest of 1 lemon

Instructions

  1. In a large bowl, mix together the rolled oats, almond butter, maple syrup, lemon juice, poppy seeds, vanilla extract, salt, and lemon zest until everything is well combined.
  2. Once combined, use your hands to roll the mixture into bite-sized balls.
  3. Lay the formed balls on a baking sheet lined with parchment paper.
  4. Refrigerate the bites for at least 30 minutes to allow them to firm up.
  5. After they have set, store the energy bites in an airtight container in the refrigerator.

Notes

For nut-free options, substitute almond butter with sunflower seed butter and use honey instead of maple syrup.
