Ingredients

- 1 cup rolled oats
- 1/2 cup almond butter (or your favorite nut butter)
- 1/4 cup maple syrup
- 1/4 cup lemon juice
- 2 tablespoons poppy seeds
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Zest of 1 lemon
Instructions
- In a large bowl, mix together the rolled oats, almond butter, maple syrup, lemon juice, poppy seeds, vanilla extract, salt, and lemon zest until everything is well combined.
- Once combined, use your hands to roll the mixture into bite-sized balls.
- Lay the formed balls on a baking sheet lined with parchment paper.
- Refrigerate the bites for at least 30 minutes to allow them to firm up.
- After they have set, store the energy bites in an airtight container in the refrigerator.
Notes
For nut-free options, substitute almond butter with sunflower seed butter and use honey instead of maple syrup.
