  • 1 ½ pounds yellow potatoes, cut into 1-inch pieces

  • 1 teaspoon salt (plus more to taste)
  • 1 teaspoon black pepper (plus more to taste)
  • 4 small zucchinis, sliced into 1-inch pieces

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together lemon juice, olive oil, minced garlic, oregano, paprika, salt, and black pepper. Place the chicken breasts in the bowl and toss to coat thoroughly. Allow the chicken to marinate for 20 minutes or up to 24 hours.
  2. Prepare the Potatoes: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Spread the potato pieces evenly on the baking sheet, drizzle with olive oil, and season with garlic powder, salt, and pepper. Toss to combine and bake for 30 minutes until golden brown and crispy, stirring halfway through.
  3. Cook the Chicken: Heat a large skillet over medium-high heat. Remove the chicken from the marinade, shaking off any excess liquid. Cook the chicken for 7-8 minutes on each side until golden brown, ensuring it reaches an internal temperature of 165°F (74°C). Let the chicken rest for 5 minutes before slicing.
  4. Cook the Zucchini: In the same skillet, add the zucchini slices and the remaining marinade. Sauté over high heat for 5-7 minutes, tossing occasionally until softened. Season with salt and pepper to taste.
  5. Assemble Meal Prep Containers: Divide the sliced chicken, roasted potatoes, and sautéed zucchini into four meal prep containers, allowing everything to cool before sealing for storage.
