- 2 lemons (zested and juiced)
- 3/4 cup sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 2 cups milk
- 3 large eggs (separated)
- 1 teaspoon vanilla extract
- Butter (for greasing)
Instructions
- Preheat your oven to 350°F (175°C) and generously grease a baking dish with butter.
- In a large mixing bowl, whisk together the lemon zest, lemon juice, sugar, flour, and salt until well combined.
- In another bowl, whisk the milk, egg yolks, and vanilla extract until smooth, then mix this into the lemon mixture.
- In a separate bowl, beat the egg whites until stiff peaks form, and gently fold them into the lemon batter until just combined.
- Pour the mixture into your greased baking dish.
- Place the baking dish inside a larger pan filled with hot water for a water bath, and bake for 30-40 minutes or until set.
- Enjoy it warm or chilled!
Notes
For a dairy-free version, replace milk with almond or coconut milk. For sweetness reduction, try agave syrup.
