Ingredients

  • 2 lemons (zested and juiced)
  • 3/4 cup sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups milk
  • 3 large eggs (separated)
  • 1 teaspoon vanilla extract
  • Butter (for greasing)

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a baking dish with butter.
  2. In a large mixing bowl, whisk together the lemon zest, lemon juice, sugar, flour, and salt until well combined.
  3. In another bowl, whisk the milk, egg yolks, and vanilla extract until smooth, then mix this into the lemon mixture.
  4. In a separate bowl, beat the egg whites until stiff peaks form, and gently fold them into the lemon batter until just combined.
  5. Pour the mixture into your greased baking dish.
  6. Place the baking dish inside a larger pan filled with hot water for a water bath, and bake for 30-40 minutes or until set.
  7. Enjoy it warm or chilled!

Notes

For a dairy-free version, replace milk with almond or coconut milk. For sweetness reduction, try agave syrup.
